Tuna Melt Spread


1 can flaked tuna

4 oz regular cream cheese

1/2  cup grated Monterey Jack cheese

1/2  tsp dried parsley (2 mL) (optional)

1/2  cup grated Monterey Jack cheese


Open can of tuna and pour off water.  Press tuna with back of spoon to drain further.  In medium microwave safe bowl, place cream cheese.  Microwave cream cheese 50 seconds.  Stir in tuna, 1/2 cup  grated Monterey Jack cheese and parsley.  Place in small  casserole dish.  Sprinkle with remaining cheese and a little extra parsley, if desired.  Microwave 35 seconds or until heated through and cheese has melted on top. Serve with sliced cucumbers or low-carb crackers for a super treat.
