Herbalife Pumpkin Cheesecake
This recipe makes 1 pie (or 14 small mini-pies)
3/4 cups finely chopped pecans
1/2 cup ground flax seed
3/4 cups almond meal
6 Tablespoons butter
1/4 teaspoon cinnamon
1/8 cup stevia
15 oz. pumpkin puree
1 teaspoons pumpkin pie spice
1 cups Herbalife Vanilla Formula 1 Healthy Meal
1/2 cup Protein Drink Mix Vanilla
1 blocks 1/3 fat cream cheese
1/2 tub cool whip
3 tablespoons Abundant Life sugar free cheesecake pudding
6 tablespoons Abundant Life sugar free pumpkin pie pudding
2 cups cashew milk (any unsweetened nut milk will work)
Melt butter then mix into the first three ingredients, this will be your crust for the cups or two pies. Mix well and push into the bottom of the pie pans or cups with the back of a spoon.
In a mixer combine the softened cream cheese with everything except the cool whip. Make sure the mixture is smooth, scoop into cups or pie. Even out with a spatula. Freeze or refrigerate for at least two hours.
Top with whip cream when ready to serve.
