Chocolate Chia Pudding (Demonstrated at the Wellness Workshop)


This is great for a dessert.


8 TBSP chia seeds
4 cups cold milk (unsweetened almond, cashew or coconut)
6 TBSP sugar free chocolate pudding (add more if the mixture is too thin)
4 TBSP PB2 (peanut butter powder)
Optional:  1 tsp sugar free caramel flavor syrup
Optional: 4 tiny squares of dark chocolate (chopped for garnishing on top)
2 cups homemade whipped cream

Add chia seeds, milk, pudding, peanut butter powder and syrup together in a large bowl.  Mix together until creamy and pudding has started to thicken.  In a separate bowl that has been chilled in the freezer for 15 minutes, whip one small carton of whipping cream with a mixer until fluffy and semi-stiff peaks form.  Do not over-mix or you will make butter!  Fold in the whipped cream to the pudding.  Garnish with dark chocolate.  Let sit in the fridge two hours for the best flavor.
