Butternut Squash Bake

1/3 cup butter
1/4 cup stevia
¼ cup ground flax seed
2 eggs
5 oz unsweetened almond milk
1 teaspoon vanilla
3 cups roasted butternut squash

Topping

½ cup protein granola (Bear Naked Brand is you can find it)
¼ cup chopped pecans
2 tablespoons melted butter

Bake the 4 cups chopped squash at 400 degrees for 35 to 40 minutes. Cream butter, sugar, eggs, milk and vanilla with mashed squash. Bake uncovered for 35 minutes. Sprinkle the toppings on and bake another 10 minutes.

½ cups serving size
